In late October, harvesters head toward Mount Olympus, the mythical home of the twelve ancient Greek gods, to carefully collect the olives for MYST®. They start harvesting while the olives are still unripe and green. While this early harvest yields less oil, it also yields a more intensely fruity, pungent flavor and more health benefits. The excellent flavor and nutritional value are ensured by

- milling within 24 hours, under strictly controlled conditions
- extracting the oil at a temperature of no more than 27°C
