Ingredients
For the Cake:
- 1 cup butter (softened)
- 2 tbsp brandy
- ¼ tsp saffron strands
- 1 cup golden caster sugar
- 4 eggs
- 1¾ cups plain flour
- ½ cup ground almonds
- 1 tsp baking powder
- 1⅔ cups raisins
- 1⅔ cups grapes
- ⅔ cup natural glacé cherries (halved)
- ⅓ cup mixed peel
- ⅓ cup chopped almonds
- ⅓ cup chopped hazelnuts
- ⅓ cup walnut pieces
To Soak:
- 3 tbsp brandy
- 2 tbsp Mānuka honey
Directions
Step 1 – Prepare the Tin:
Preheat oven to 320°F (fan). Butter and line an 8-inch deep round cake tin with parchment paper and wrap newspaper around the outside for even baking.
Step 2 – Infuse the Saffron:
Warm the brandy, add saffron, and let it infuse. In a bowl, beat butter, sugar, eggs, flour, ground almonds, baking powder, and salt until smooth. Stir in the fruits, nuts, and saffron-brandy mixture.
Step 3 – Bake:
Pour into the tin and smooth the top. Bake for 1½ hours, cover with foil, then lower temperature to 284°F and bake for another hour. Cool in the tin.
Step 4 – Soak:
Mix Manuka honey with brandy and drizzle over the warm cake. Wrap tightly in foil and store in an airtight container. Feed occasionally with honeyed brandy for added richness.
