Pretty high level of oleocanthal, so there is the expected throat hit, and the flavor has a nice smokiness. I drink straight, but this would certainly add a nice flavor to a salad. The history of how the farm came to be in neat, and the owner sounds very committed to creating a quality healthy olive oil.

sparta gold is the “younger ” brother of sparta red and sparta white high phenolic evoos. sparta white holds for this year the world record for the highest oleaocanthal and total polyphenol content , and all 3 are made by wild olives ! its an amazing oil in very limited numbers !

A very strong and pungent liquid (green) gold! I shot with Sparta white and/or Sparta green and lemon daily. Hopefully doing wonders for the body. I need to mix with a lower polyphenol EVOO ~2000 mg/kg and then it’s a bit less pungent to have with fresh bread! Just went to order more and the 2024/25 is sold out 🙁

many thanks for your description which is 100 % correct ! Sparta is amazingly strong and its amazing with Lemon, oregano …thyme as some other clients tend to use if not as direct intake ( a spoonful in the morning ) .
sparta gold and green are sold out for the season ( and hopefully 2025 season gives us a few more ) but we did manage to get some more sparta white and red which hopefully will last as till summer !
