the crisp winter that follows, prolonges skin contact and fermentation, enriching the vin de raisins with complexity and finesse. an old copper distilation pot is used to distinguish the core spirit, which is then matured for 60 months in an old barique previously home to ‘anama vintages ‘ for several years
