HEALTHY HIGH PHENOLIC EXTRA VIRGIN OLIVE OIL
An organic extra virgin olive oil (EVOO) that is also an early harvest EVOO with extraordinary health benefits, ATSAS is ideal for anyone concerned about their health and the health of those they love. As a particularly high phenolic olive oil, ATSAS is unusually health protective because it includes many vitamins, minerals, and polyphenols.
Scientists have analyzed its polyphenol content and found that ATSAS is so rich in phenolic compounds that just a half teaspoon per day is enough to confer significant health benefits. A January 2021 analysis from the University of Athens shows that ATSAS EVOO from the 2019 harvest contains 1313 mg/kg oleocanthal and a remarkable 2263 mg/kg total polyphenols.
SUSTAINABLE FARMING, MINDFUL HARVEST AND PRODUCTION
Several years ago, one of the founders of ATSAS, environmental engineer Nicolas Netien, and his pregnant wife Maria drilled holes into the dry, rocky soil of Cyprus to plant four thousand olive trees. Well versed in cutting-edge sustainable farming techniques, the ATSAS team uses natural compost and ground cover to provide nutrients to the trees. Even in the island’s hot, dry summers, they irrigate these organically cultivated olive groves very little (a practice associated with higher phenolic content).
The ATSAS team’s early harvest catches olives when their polyphenol content is highest. They harvest by hand and typically begin an additive-free cold extraction of the oil just half an hour after the harvest—unusually fast. This helps them preserve more health benefits while avoiding the oxidation and fermentation that occur when olives are left to sit for long periods before milling.
The EVOO is allowed to settle in the tank, rather than being filtered. After bottling, opaque black glass bottles keep out the light, and the approved inert gas nitrogen pushes out the oxygen that could damage the olive oil.
LONG LISTS OF HEALTH BENEFITS
A 2017 University of Athens study revealed that ATSAS EVOO contained the highest level of phenolic compounds ever recorded. Recent scientific studies suggest that high phenolic olive oil can help prevent, treat, and in some cases reverse symptoms of several serious illnesses. That is because olive oil polyphenols are
- anti-atherogenic (preventing buildup of fatty substances, or plaque, inside the arteries)
Scientific evidence from clinical trials and epidemiological studies suggests the polyphenols in extra virgin olive oil may help reduce levels of glucose, “bad” (LDL) cholesterol, and total cholesterol; they also help prevent or fight

ATSAS is not merely eligible for the European Union health claim according to Regulation 432/2012, which applies to EVOOs containing at least 5mg/20g (250mg/kg) of certain polyphenols.
