Our winery and distillery is a small family-run business where making a profit is not the primary objective. Only through
research and constant evolution can we achieve our goal of creating something better.
Stavros Spyropoulos loves tsipouro. It is something that has challenged
and occupied his free time since 1998. In 2013, his unique insights,
dedication, and hard work in creating the best tsipouro he could, came
to fruition, when he decided to share the results of his passion with not
only his friends, but with the whole world.
Since then, our family has made investments in modernized facilities
and equipment for the production and bottling of wine and spirits,
taking great care to maintain the spirit and tradition of the distillation
Fotis Spyropoulos, Stavros’ son, has since gotten involved along with Fotis’ wife, Angeliki, making a turn in their
respective careers, devoting themselves to the family business. The combination of the wisdom of the old generation
with the freshness of the new generation, has realized our family’s vision to create premium and modern products that
hold true to its traditional roots.
Our family’s endeavors in wine-making and distillation may be recent, however, many years of research and hard work
have taken us to where we are today. We follow a difficult and sometimes costly road in our pursuit of fine wine and
great tsipouro, but we are emboldened by the love and acceptance of our customers. Every decision we make,
therefore, is made by keeping the following ideal in mind:

Despite the fact that Spyropoulos Distillery is just 8 years old –age that would make a Grappa distiller laugh loudly- it has the audacity to brag about the 744 distillations and the handling of 802 tonnes of pomace.
On the other hand the above is not a reason for criticism, because products like “π5ντε” (5 in Greek) forces you to admit that the producer from Evia may not do it for a long time, however he does it well!
There is not a lot of information about “π5ντε” beside the fact that it has spent 5 years in French and American barrels, ageing that I doubt if is able to result in the wonderful deep amber hues without added colouring. But the fact is that the teasing appearance and the precious (for a Tsipouro) packaging that includes a simple yet elegant carafe already give 2 reasons for bringing this product to your glass.
In case this glass is a Riedel Vinum Cognac, “π5ντε” will impress with the expressive, bouquet of sultana raisin, caramel, vanilla, sweet oak and garam masala.
Equally persuasive is Spyropoulos Tsipouro on the palate, which comes as a perfect extension of the nose. Served at 11-13ºC “π5ντε” is offering very good length, perfect integration of alcohol and velvet roundness. Of course some –including me – will find the sweetness and use of oak excessive, yet it would be unfair to criticize the distillate about that, especially when all the other virtues are so wonderfully presented.
I am sure that this sweetness will not only impress the average consumer but also it will provide a perfect match for caramel based desserts or full bodied cigars as well. Moreover, if it further enhanced by the arranging of the bottle in the freeze for a day or so, “π5ντε” will offer fantastic pairing even with fois gras or Roquefort! However, if these 5 reasons were not enough to convince you so far, I doubt if I can manage to do it by just saying that “π5ντε” is by far the best aged Tsipouro that I have ever tasted!
